BBQ Chicken Kebabs

PREP: 10 minutes
BROIL: 6 minutes
YIELD:4 servings

Cooking spray
8 chicken tenders (about 1 lb)
8 wooden skewers, presoaked
1/2 cup ketchup
1 Tbs brown sugar
1 tsp cider vinegar
1 tsp Worchestershire sauce
Salt and pepper

1. Preheat broiler. Cover broiler pan with foil; coat with spray. Thread chicken onto presoaked skewers.
2. Mix ketchup, brown sugar, vinegar, and Worcestershire sauce in a small bowl. Season chicken with salt and pepper, and brush with sauce.
3. Place on pan and broil 6 inches from heat for 3 minutes. Turn and brush with remaining sauce. Cook an additional 3 minutes.

HOW KIDS CAN HELP: Mix the ingredients for the sauce.

Deviled Eggs

PREP: 10 minutes
YIELD:6 servings

6 large hard-boiled eggs, peeled
1/4 cup light mayonnaise
1/4 tsp salt
Dash black pepper
1/4 tsp dry mustard
Paprika

1. Cut eggs in half lengthwise, and remove yolks to a small bowl. Reserve whites. Add mayonnaise, salt, pepper, and mustard to yolks; mash with a fork to combine.
2. Spoon yolk mixture into egg whites; sprinkle with paprika before serving.

HOW KIDS CAN HELP: Scoop out the yolks and mash with the mayo; spoon yolks into whites.
PER SERVING (2 halves): 111 calories, 9 g fat (2 g saturated), 219 mg sodium, 215 mg cholesterol

Lemon-Dill Dip

PREP: 5 minutes
YIELD:1 cup dip

Lemon-Dill Dip
1 cup low-fat plain yogurt
1/3 cup chopped fresh dill, or 1 1/2 Tbs dried
1 tsp grated lemon zest
1 Tbs lemon juice
Salt and pepper to taste

Stir ingredients together in a small bowl. Chill until ready to serve, with green beans or assorted veggies.

HOW KIDS CAN HELP: Stir dip; snap ends off beans.
PER SERVING (2 Tbs): 20 calories, 1 g fat (0 g saturated), 58 mg sodium, 2 mg cholesterol

Sweet Tortillas

PREP: 5 minutes
YIELD:4 servings

1/2 cup reduced-fat cream cheese, softened
1 Tbs honey
Dash vanilla
4 whole-wheat soft tortillas (6-inch size)
1/4 cup raisins
1/4 cup grated carrots

Stir together cream cheese, honey, and vanilla in a small bowl; spread 2 Tbs on each tortilla. Top tortillas with 1 Tbs each of raisins and carrots. Fold in half; cut into 2 triangles.

HOW KIDS CAN HELP: Mix filling; spread onto tortillas.
PER SERVING (2 triangles): 193 calories, 7 g fat (4 g saturated), 297 mg sodium, 20 mg cholesterol

Peachy Muffin-Cakes

PREP: 15 minutes
Bake: 20 to 25 minutes
YIELD:12

1 1/2 cups flour
1 box (3.4 oz) instant vanilla pudding mix
1 1/2 tsp baking powder
1/8 tsp salt
1/2 cup (1 stick) butter, softened
1/3 cup sugar
2 eggs
1 1/2 tsp baking powder
1 tsp vanilla
3/4 cup low-fat milk
1/4 cup peach jam or preserves

1. Preheat oven to 350¢ªF, and line a muffin tin with paper liners.
2. Whisk flour, pudding mix, baking powder, and salt in a medium bowl. Set aside. Cream butter and sugar in a large bowl. Beat in eggs and vanilla.
3. Alternately add flour mixture and milk to bowl (the batter will be a bit stiff). Spoon batter into prepared muffin tin, filling about halfway.
4. Place scant teaspoon of jam on top of each cupcake; press in lightly. Bake 20 to 25 minutes, or until toothpick comes out clean.

HOW KIDS CAN HELP: Mix the batter; spoon jam onto cakes.
