Emma's 8 mths and still in her infant car seat....
I was thinking about buying her next seat.... any recommendations?

Well I have to give a handsdown to Britax Marathon's, they are super easy to install and Rear Face to 35 pounds and Forward Face up to 65 pounds.
You can also look into the Grace MyRide, it Rear-Faces to 40 pounds and Forward Faces to 65 pounds
Another great seat is the EvenFlo Triumph Advance,
I would try to keep her rear-facing longer that the age of 1 if possible.........my son will almost be 2 in 25 days and he is still rear-facing!

She has the Graco safe seat up to 32 lbs....... should she stay in it until she no longer fits?

How long is she Susan? My kids went over the height thing before they ever did the weight. But now the ped said to keep them in the infant seat until their head gets closer to the top.

Shes only on teh 2nd strap on the back....... Her head isnt at the top yet....

Make sure you are within the limits of the carseat for height/weight but also make sure she still has 1 inch of hardshell above her head. Nicholas was in his infant seat (Graco SafeSeat also) until he was 14 months!

My kiddos were always way tall except Preston. I had the older two moved to another seat (still rear facing) at 8 months or so.

Ethan was in his til almost 11 mths but outgrew it height wise. Still hasnt outgrown the weight. He doesnt like how layed back the infant seat is and trys to sit up.

I moved Cody out of his infant seat when he got to heavy for me to carry him in it. I put him rear facing in his britax marathon. I love the Britax seat!

If she is still within the limits of her infant seat then keep her in it........ I loved our infant seat and when Gael got to heavy then I would just get him out of the seat, there was no reason for me to have to lug out the seat from the car.
Another thing I want to point out just in case you did not know is that the feet hanging out at the end of the infant seat does not mean she has outgrown the seat......I am just saying this because a lot of people think that.............

Her head is close to the top of the seat....does this mean shes outgrown it?

she will have outgrown the height when she no longer has 1in of hard plastic shell above her head.
Zach outgrew the infant seat due to height rather than weight. We switched him to the Evenflo Triumph Advance and had him rearfacing till around 18 months. I've been looking into the Graco My Ride 65 for the next baby in that same pink pattern, its so cute!
