what does it do?

it's a fill consisting of two or more colors blending together.

say you have red and you want it to blend into another color you use the gradient tool to do so.

It's a great way to fade things in and out. Like, when you see those buttons that are shadowed to grey on the top. Or things that are rainbow colored across. Things like that.
