View Full Version : Mom's Pumpkin Bread

Since fall is coming up, here is a great recipe - my mom has been making it for years! It's great right out of the freezer, I usually make several loaves to freeze and pull out whenever I need them!

4 eggs
3 cups sugar
1 cup vegetable oil
1/3 cup water
2 cups canned pumpkin (15 or 16 oz can)
3½ cups flour
2 tsp baking soda
1½ tsp salt
1 tsp cinnamon
1 tsp nutmeg
1½ cups nuts, chopped (optional)

1) Combine all ingredients in large mixing bowl. Beat with mixer until well mixed.
2) Add chopped nuts, if desired. Stir with spoon until well mixed. Spray baking pans with non-stick spray.
3) Bake at 350 degrees for 1 hour.
4) Makes 2 large loaves or 6 medium loaves.
5) Cool and wrap with plastic wrap. Store in refrigerator or freezer.

I make one very similar to that. I could eat the whole loaf.

Me too, especially when it's cold! I think I may have to make some this week because now I'm craving it!

I'm making this tomorrow morning, as long as I don't get called into work tonight - I've been craving pumpkin stuff!! :)

i made this a while back (you put it in the recipes last yr) and it was super yummy. i used home made pureed pumkin so it was a tad runnier than canned so i left out the water. it was perfect

That sounds so good. Cameron loves pumpkin so he'd probably go crazy for this!!

Do you know if this could also be cooked in muffin form?

I don't know why not! I just wouldn't know how long to cook them for...I do have a good pumpkin muffin recipe that I will post!
