I got a starter for this from a friend at work yesterday, so I'm going to attempt to make it! I've tried before but have never made it all the way thru - I'm anxious and determined to this time...
Amish Friendship Bread
***Note – DO NOT use metal spoons or bowls for mixing! DO NOT refrigerate! It is normal for batter to rise, bubble, or germinate. If air gets into the bag, let it out!***
1 (.25 oz) package active dry yeast
¼ cup warm water (110 degrees)
3 cups all-purpose flour, divided
3 cups white sugar, divided
3 cups milk
1) In a small bowl, dissolve yeast in water. Let stand 10 minutes.
2) In a 2 quart glass, plastic, or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added.
3) Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly.
4) Place in Ziploc bag. Consider this day 1 of the 10 day cycle. Continue following directions below.
Day 1 – This is the day that you receive the batter – do nothing.
Day 2 – Mush bag.
Day 3 – Mush bag.
Day 4 – Mush bag.
Day 5 – Add 1 cup flour, 1 cup sugar, 1 cup milk
Day 6 – Mush bag.
Day 7 – Mush bag.
Day 8 – Mush bag.
Day 9 – Mush bag.
Day 10 – Combine in a large bowl: Batter and 1 cup flour, sugar, and milk. Stir and pour 4, 1 cup starters into large Ziploc bags. Give the bags to friends with these instructions. You may want to keep one bag for yourself!
With the remaining batter in bowl, add and mix:
1 cup oil
1 cup sugar
2 tsp cinnamon
1 tsp baking powder
1 tsp vanilla
1 large box instant vanilla pudding
3 eggs
½ cup milk
½ tsp baking soda
2 cups flour
½ tsp salt
Pour into 2 greased and sugared loaf pans. Sprinkle extra sugar and cinnamon on top. Bake at 325 degrees for 1 hour. Cool for 25 minutes and wrap.
Chocolate cake
Substitute cinnamon and vanilla pudding with chocolate pudding. Add 1 cup chocolate chips.
Banana cake
Add: 1 or 2 bananas and an extra ½ tsp baking soda.
Lower fat cake
Use ½ cup applesauce and ½ cup oil, instead of all oil.
