These muffins are SO bad but SO yummy!!
1/3 cup shortening
½ cup sugar
1 egg
1½ cup cake flour (1½ cups minus 3 tbsp all-purpose flour)
1½ tsp baking powder
½ tsp salt
¼ tsp ground nutmeg
½ cup milk
Topping:
½ cup sugar
1 tsp cinnamon
½ cup (1 stick) margarine, melted
1) In a mixing bowl, cream shortening, sugar, and egg. Combine dry ingredients; add to creamed mixture alternating with milk.
2) Fill greased muffin tins 2/3 full.
3) Bake at 325 degrees for 20-25 minutes, or until golden brown. Let cool for 3-4 minutes.
4) Meanwhile, combine sugar and cinnamon in a small bowl. Roll warm muffins in melted butter, then in sugar mixture.
5) Serve warm. Makes 8-10 muffins.
